“I’m speechless”: Ibai Llanos is fascinated by the Peruvian ceviche at Maido

Ibai Llanos arrived in Peru for the first time this week. It is part of his trip through several Latin American countries. He also took advantage of his visit to Lima to try Peruvian food. That’s why he visited Maido, the restaurant that was voted the best in the world in The World’s 50 Best 2025 list.

Ibai landed in Lima on Tuesday, November 24. He had several plans from the start. First, he wanted to meet Peruvian creator Koirandoshil. Then, he wanted to try the famous pan con chicharrón (bread with pork rinds) at a traditional sandwich shop. He also came to deliver the Sartén Dorada (Golden Frying Pan), the trophy Peru won in the World Breakfast Championship, a competition he organizes himself.

In addition, his visit gave him the opportunity to fulfill a dream. He wanted to record a video at Maido. “It’s one of the videos I’m most excited to record,” he said as he sat down at the table. Thus began a journey through the flavors of the coast, the mountains, and the jungle.

What did he think of the ceviche?

“The best restaurant in the world in 2025 is in Peru. And I’ve been there,” he wrote in the description of the video posted this Sunday. In the images, he is seen sampling a menu featuring chia, paiche, shrimp, tuna, and sea urchins. He also enjoyed a special version of ceviche created by chef Mitsuharu ‘Micha’ Tsumura. This dish featured pistachio cream, sea snails, squid, fortuno, and leche de tigre.

Ibai’s reaction was swift. He said he had no words to explain how he felt. Then he ordered another ceviche. “Long live Peru and long live ceviche! It’s a 10 out of 10,” he exclaimed excitedly.

At the end of the experience, the streamer once again praised Peruvian cuisine. “Incredible, amazing, impressive. The food in Peru is spectacular. Long live Peru,” he declared before saying goodbye.
